From the Lubbock Avalanche-Journal:
In 2011, Gov. Rick Perry proclaimed Lamesa the birthplace of the chicken-fried steak.
According to legend, the dish was created by accident in 1911 in Ethel’s Home Cooking restaurant. Cook Jimmy Don Perkins placed steaks into fried chicken batter after he missed a comma in a waitress’ order for “chicken, fried steak,” it claims.
The story is more fun than confirmed fact, festival director Terri Stahl said. But that doesn’t mean the battered-and-fried steaks don’t still give reason to celebrate.
